At the Olive Tree Restaurant we are proud to have our recipe Duo of Cherrington Farm braised blade of beef, by Head Chef Nigel Davis feature in the newly released Made in Shropshire recipe book.  The book encompasses fantastic recipes from a range of restaurants and food producers in the County.  We feel this book is a celebration of the what Shropshire has to offer and also cements our commitment to locally sourced ingredients.

We have personally met with each of our suppliers and visited their farms and our menus feature meats from Cherrington Farm and Buttercross Farm and vegetables from AJ Edwards Shrewsbury, Chadwell Grange Farm, Newport and Canalside Farm, Stafford.

We chose this recipe as our showcase meal, as it demonstrates our Sous Vide technique, which slow cooks the dish to release all it’s flavours and keeps the beef as tender as possible.  This technique can be experienced in our restaurant and also you can try out the dish, where we also have our recipe and a copy of the book on display.
